Our bakery sits on a quiet street in Copenhagen, but the scent of baking travels far. Neighbours set their morning routines by it. Workers pause on their commute. Families make special trips on weekends just to watch the pastries emerge from the oven.
The Art of Slow Fermentation
We do not rush our doughs. Our sourdough starter, affectionately named Bedstemor, has been alive for over thirty years. She requires daily feeding, careful temperature control, and respect. In return, she gives us breads with complex flavours and excellent digestibility.
The process begins the evening before. Flour, water, and a portion of starter are mixed and left to develop overnight. By morning, the dough has transformed, full of tiny bubbles and ready for shaping. Only then do we add salt, which strengthens the gluten and brings out the grain's natural sweetness.
Danish Pastry, Done Properly
Our Danish pastries are made the traditional way, with layers of butter folded into enriched dough. This technique, called lamination, creates the flaky, crispy texture that makes these pastries famous. We use Danish butter exclusively, with its higher fat content and distinct cultured flavour.

Our team includes three generations of bakers, each bringing their own knowledge and passion. The oldest among us trained in Copenhagen's finest bakeries during the 1970s. The youngest studied pastry arts in Paris. Together, we blend tradition with innovation.
